Stovetop Cornbread (Not Quite a Recipe—But Close Enough!)

I learned a new skill this week and it was dirt easy! In fact, it made me question why I’d never tried this before.

I LOVE cornbread but I hate heating up the house by turning on my oven in the summer. A friend of mine said, “Why don’t you just fry it up on your griddle? That’s what I do.”

DUH!!! Why hadn’t I thought to do this??? It was SOOOO easy!!!

So here’s the recipe:

  • Mix up your favorite cornbread recipe. (I always use the recipe that comes on the box plus a splash of vanilla.)
  • Cook them up like pancakes on a well-greased griddle.
  • Enjoy!

They cook up faster than pancakes so keep an eye on them. You don’t want them to burn. You could serve them for breakfast or they’d go perfectly with chili or fried chicken dinner. YUM!!!
